Citrus Kale Shake

My favorite morning "cocktail".

I've been on a sabbatical. First for health, second for leisure. First out of state, then out of country. Now that we're back home I'm craving two things: routine and wholesome food. Especially for breakfast.

This has been my favorite way to start the day. Cleansing and refreshing all at the same time. It has a kick to it, but the citrus is the secret to cutting the edge off the typical kale "zing." I recommend a pretty powerful machine, like a Vitamix, to keep the texture smooth. Otherwise you can rough it if you only have a conventional blender but are still feeling adventurous. Citrus Kale Shake
Serves 4

4 - 5 oranges
1 lemon
2 large kale leaves (or more!), rinsed well and patted dry
1-2 c. ice
1-2 T. raw honey, to taste

Place oranges, lemon and ice in a powerful blender. Remove kale leaves from the stems. Fill remainder of blender with kale.  Blend on high. Add honey to taste, more ice if needed and continue blending until smooth. Enjoy immediately.
