Simple-Sweet Carob Treats


Happy Valentine's Day!

While everyone is indulging in decadence this Valentine's, I'm finding my refuge in carob and coconut oil. Nothing more, nothing else. I'm a bitter sweets kind of girl, so for me this hits the spot.

Ingredients:
1 c. + 1 T. extra virgin coconut oil
1 c. carob powder

Directions:
Mix coconut oil and carob powder together until very smooth. Blending with a fork is best. Spread evenly into an 8x8 pan. Let harden until firm enough to hold shape, but soft enough to cut. Usually about 10 - 20 minutes. Enjoy!

P.S. If you need a touch more sweetness, try pairing this with pure maple syrup. Just a touch, though! Remember, carob is already 50% sugar. It can turn overly sweet pretty quickly!
